4 cups shredded cooked chickenĀ (a roasted deli chicken works great)
1 cup chopped celery
1-2 Tbsp. sliced green onion
3/4 cup mayo (add more according to taste)
1 Tbsp fresh lemon juice
1 Tbsp tarragon vinegar
1 tsp dried tarragon
1/2-3/4 cup golden raisins
1/2-3/4 cup toasted slivered almonds
salt and pepper to taste
In large bowl, mix together the chicken, celery, onion, and raisins. In separate bowl, blend mayo, lemon juice, vinegar, tarragon, salt and pepper. Taste and adjust seasonings. Pour half of dressing over chicken mixture and toss together; add remaining dressing to desired moistness. Chill thoroughly. Before serving, taste and adjust seasonings if necessary. Stir in toasted almonds.
I use this chicken salad as a filling for sandwiches or as the crowning glory of a delicious green salad.
