1 (15 oz) can black beans, drained and rinsed
1 cup frozen corn kernels, thawed or 1 (15 oz) can corn
1/2 cup chopped red bell pepper
1/2 cup chopped fresh cilantro
4-6 green onions, sliced
3 Tbsp lime juice
2 Tbsp balsamic vinegar
1/2 tsp ground cumin
1/4 tsp kosher salt
1 large jar of your favorite prepared salsa
Combine all ingredients. Great with chips or with Monterey Chicken. Store in refrigerator up to 3 days in airtight container.
